Soy milk, vegan butter, dairy-free dark chocolate - these are just some of the replacements you'll be using in your vegan brownies. Meanwhile, sieve the flour and cocoa powder into a large bowl, then stir in the sugar and a pinch of salt. Halve the vanilla pod lengthways, scrape out the seeds, then add them to the bowl.   7. Sprinkle the cranberries and nuts on the top. Gently press them in. Bake for 15 -20 mins. They are quite gooey so it’s quite hard to tell when they are done. But they are also pretty forgiving so they won’t dry out.
  8. Let the brownies cool before removing them from the tin. Enjoy 😋
