- Get 1 Red bell pepper
- Make ready 1 White or yellow onion
- Prepare 3-4 Whole chives
- Get 1 teaspoon cumin
- Prepare 2.5 pounds or 3g of Green lentils

- Get 5 cloves garlic (optional)
- Prepare 1 tomato or tomato paste (preferably without peel)

- Prepare 1 tbsp Chicken bouillon (optional)
- Take 2 tbsp Sofrito cooking base
- Take 1/4 cup Green peas
- Prepare 1/4 cup diced peeled carrots

- Get 1/2-1 cup yellow squash (calabaza)
- Prepare 1/4 cup sweet corn
Add olive oil to a large Dutch oven and heat over medium heat. Cook approximately six or seven minutes, or until the onions are translucent. Stir in lentils, and add water and tomatoes. When ready to serve stir in spinach, and cook until it wilts.

- Rinse lentils then add to pot with enough water to cover completely.
- Add red pepper (roughly chopped in large pieces), onion (cut in half), garlic, chicken bouillon, whole chives, tomato (whole or paste), salt
- Stir, combing ingredients then Bring to a simmer, cover, and let cook for 20 minutes.
- After 20 minutes, lower flame to Med low and remove onion, whole tomato, chives, and red pepper from pot and set aside to mix in blender.
- Stir lentils and taste water to check if desired salt level has been achieved. If not, we can add more salt after blending remaining ingredients.
- Take ingredients we set aside (red pepper, tomato, chives, onion) and add to blender (or food processor) and make a purée with these ingredients. Add salt if desired then add purée back to lentils stirring to combine and simmer on medium for another 20 minutes or until lentils are at desired tenderness.
- Serve with rice or bread!
Stir in lentils, and add water and tomatoes. When ready to serve stir in spinach, and cook until it wilts. Of course, you can't have lentil soup without the lentils! I went with green lentils, but you could also sub other varieties if you'd like (just adjust cooking time accordingly). And if you're not a lentil fan, you could always sub cooked beans, such as white beans or chickpeas - both would be lovely here.
