While the peas are simmering add your onions, tbsp oil, (or broth/water) pinch of salt & pepper to a med/lg skillet. in a large pot, heat the olive oil over medium high heat then sauté onions until light golden. Cook onion, garlic, celery, carrots, and peppers until onions glass and vegetables soften. Stir in split peas and broth.
